Hot Caribbean Wings

Wings:

1/8 tsp. salt

2 ½ pounds chicken wings, split

Sauce:

1 cup mango nectar

2 tsp. habañero hot sauce

1 pinch allspice

1/8 tsp. salt

1/8 tsp. black pepper

2 tsp. lime juice

¼ cup chopped cilantro

Preparation:

Wings: Pierce split chicken wings all over with tip of knife; pat dry. Place on wire rack fitted into large foil-lined jelly-roll pan. Sprinkle with 1/8 teaspoon salt. Bake in preheated 425ºF oven 35 minutes or until cooked through (165ºF), turning over once. Broil 7 minutes on high, turning once.

Sauce: In 2-quart saucepan, mix mango nectar, habañero hot sauce, allspice, salt, and black pepper. Cook on medium-high 8 minutes to reduce by half. Stir in lime juice; toss with cooked wings and chopped cilantro; makes about 25 wings.
