¾ cup cornmeal
1 lb flour
2 tsp baking powder
2 tbsp sugar
4 tbsp shortening
Pinch of salt
1 egg
Milk or water to mix
Preparation:
Melt and cool shortening. Sift cornmeal, flour, salt, and baking powder together. Beat eggs well. Mix sugar, shortening, and eggs with sifted flour. Add enough milk to mix to a stiff batter. Half fill greased muffin pans and bake in a moderately hot oven for about 20 minutes.
