Bajan Flying Fish

6 boned flying fish or flying fish fillets

2 limes

¾ tsp salt

1 onion, chopped

¼ cup chopped green onions

2 garlic cloves, minced

½ hot pepper, chopped

½ tsp ground thyme

¼ tsp ground cloves

¼ tsp black pepper

2 tbsp butter

Bread crumbs

Preparation:

Marinate fish with juice of 1 lime and ¼ tsp salt for about 20 minutes. Combine onion, green onions, garlic, hot pepper, thyme, cloves, ¼ tsp salt and juice of 1 lime. Wash fish and place in bowl; sprinkle fish with ¼ tsp black pepper and ¼ tsp salt. Spread onion mixture in grooves left after boning of fish or over fish fillets. Melt butter in saucepan, dip fish in bread crumbs and fry in hot butter until brown, about 5-10 minutes. Serve with lime slices. Serves: 6.
